Egg Fried Rice – A Timeless Classic


Egg fried rice is one of the simplest yet most comforting dishes in Chinese cooking. With just a handful of ingredients—fluffy rice, fresh eggs, and spring onion—you get a fragrant, golden bowl that’s full of flavour. It’s quick to prepare, versatile enough to pair with any main dish, and has been loved across generations, from family kitchens to restaurant tables.

Ingredients

  • 2 free-range eggs
  • 500 ml cooked rice
  • 1 spring onion

Seasoning

  • Soy sauce
  • Sea salt

Method

  1. Separate the egg whites and yolks.
  2. Heat a little oil in a pan, scramble the egg whites until half-cooked, then add the rice. Stir-fry until evenly mixed.
  3. Add the egg yolks, stir until golden and fragrant.
  4. Season with a dash of soy sauce and sea salt.
  5. Add chopped spring onion, stir through, and cook for another 30 seconds.
  6. Serve hot in a bowl.
